White Chicken Chili

With the weather getting cooler this is a great recipes to throw in the crock pot. This recipe is gluten free, dairy free and RESET friendly! It doesn't get much easier than throwing it in the crock pot and turning it on! I hope you enjoy!


INGREDIENTS

  • 1 ½ lb. boneless, skinless chicken breasts

  • 1 medium onion, diced (8oz).

  • 1 small green pepper, diced (4oz)

  • 2-4oz cans diced green chiles

  • 6 cloves garlic, minced

  • 1T ground cumin

  • 1 tsp. dried oregano

  • 1 Tbsp. chili powder (less if you don’t like any spice)

  • 2 tsp. sea salt

  • ½ tsp. black pepper

  • 2 cups chicken bone broth (I use Kettle & Fire brand, discount code below)

  • 1 (14-ounce) can cannellini beans, drained and rinsed

  • 1 (14-ounce) can light coconut milk

  • Juice of ½ lime

  • 1 small jalapeno sliced, seeds removed (optional)

  • Fresh cilantro and lime wedges for garnish (optional)

  • Avocado slices for garnish (optional)

INSTRUCTIONS

  1. Heat a medium skillet on medium-high heat and add the onions & peppers to the skillet and add a couple splashes of broth to the skillet. Let them cook down a bit to let the flavors meld. Remove from heat.

  2. Add the diced onions & peppers (not jalapeno unless you like spicy!), chiles, garlic, beans, and spices to the bottom of the crock pot. Stir to combine.

  3. Add the chicken breast on top of the veggies

  4. Add the broth and place the lid on the slow cooker.

  5. Cook on high 4 hours or until the chicken is done and the vegetables are tender.

  6. Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.

  7. Add the canned light coconut milk, stir to incorporate. Continue heating for an additional 10-15 minutes or until heated through.

  8. Just before serving, add in the lime juice. Taste to adjust any seasonings as needed.

  9. Serve in bowls garnished with chopped cilantro, sliced avocado, sliced jalapeños, greek yogurt, green onions, cheese, or tortilla strips-Whatever you fancy!
