When the summer heat hits, there's nothing I crave more than something light, refreshing, and bursting with flavor. This Watermelon, Feta, and Mint Salad ticks all those boxes and then some! The juicy sweetness of the watermelon perfectly complements the salty tang of the feta, while the fresh mint adds a cool, aromatic lift. It's a surprisingly addictive combination that's always a hit at cookouts, potlucks, or even just as a light lunch paired with a lean protein on a hot day.
What I love most about this salad is its simplicity. With just a few key ingredients, you can create a dish that's both vibrant and incredibly satisfying. Plus, it's so easy to throw together – no complicated steps here!

Ingredients:
4 cups cubed seedless watermelon
4 ounces feta cheese, crumbled
1/4 cup fresh mint leaves, roughly chopped
1/2 of a peeled English cucumber (you can leave this out if you aren't a cucumber fan)
Optional: 1/4 thinly sliced red onion (for a little extra bite)
For the dressing (optional):
1 tablespoons olive oil
1 tablespoon lime juice (or lemon juice)
1 teaspoon honey (or allulose syrup)
Pinch of salt
Black pepper (optional)
Directions:
Prep the watermelon: Cut the watermelon and cucumber into bite-sized cubes and place them in a large bowl.
Add the feta and mint: Sprinkle the crumbled feta cheese and chopped fresh mint leaves over the watermelon.
Add red onion (optional): If you like a little zing, add the thinly sliced red onion.
Make the dressing (optional): In a small bowl, whisk together the olive oil, lime juice, honey (or maple syrup), salt, and pepper.
Dress the salad (optional): Gently drizzle the dressing over the watermelon, feta, and mint. You can also serve the dressing on the side.
Gently toss: Toss the salad gently to combine the ingredients.
Chill (optional): For the best flavor, chill the salad in the refrigerator for about 15-20 minutes before serving.
