Craving Comfort Food? Try My High-Protein, Lightened-Up Reuben Sandwich!

If you know me, you know I’m a sucker for hearty, comforting meals—especially when I can put a healthy spin on them. The Reuben is one of my favorite “treat yourself” sandwiches to order out, but the classic version is typically loaded with calories & fat. So I set out to crack the code and create a version that’s higher in protein, lower in calories, and just as satisfying as the original. Spoiler: I nailed it.

A (Very) Brief Reuben Backstory:
The Reuben sandwich is a deli classic, rumored to have originated in New York or Omaha (depending on who you ask). Traditionally, it’s stacked with corned beef, Swiss cheese, sauerkraut, and Russian dressing on buttery grilled rye bread. Delicious? Yes. Waistline-friendly? Not so much. But don’t worry—I’ve got you covered.
My Lightened-Up Reuben Recipe:
All the flavor, none of the food coma.
INGREDIENTS:
4 oz Boar’s Head Corned Beef
2 Pieces Pepperidge Farm Deli Swirl Rye & Pumpernickel Bread, toasted
1.5 pieces thin-sliced Swiss cheese (40 cals/slice)
1T Ken’s Steakhouse Light Thousand Island
4T (2 servings) caraway Kraut
DIRECTIONS:
1. Build your sandwich: Add corned beef to one piece of bread, spread thousand island on the other piece of bread, and top with cheese and kraut. Combine the two pieces of bread.
2. Optional: Toast in a skillet for a few minutes for extra melty goodness.
3. Cut in half and enjoy! Perfect pairing with carrot sticks, other veggies, or a side of veggie soup.
