High Protein Berry Baked Oats

Nothing is quite as comforting as a warm bowl of oatmeal on a cool morning. I love oatmeal but it’s typically pretty high on the carb front and low in protein and sometimes I just don’t have time in the mornings to make a fresh bowl. Enter these baked oats with a good dose of protein to help keep those blood sugar and energy levels stable!! I’ll be having this alongside my protein coffee for a complete breakfast. INGREDIENTS:⁣

🔹4 cups frozen berries (microwaved to soften)⁣

🔹1/4 cup monk fruit sweetener⁣

🔹1/4 cup sugar-free maple syrup⁣

🔹4oz light or greek cream cheese (softened in microwave)⁣

🔹2 cups almond milk⁣

🔹150g egg whites (10T)⁣

🔹2 scoops vanilla UMP protein powder⁣

🔹3 cups oats (I used old fashioned)⁣

INSTRUCTIONS:⁣

✅ Preheat oven to 350. ⁣

✅ Spray a 9X13 pan with non-stick spray.⁣

✅ Add 1-2T monk fruit to the microwaved berries to sweeten (to taste).⁣

✅ Mix the oats and protein powder together in a large bowl. ⁣

✅ Add in egg whites, maple syrup, almond milk, and 2/3 of the berries together with the dry mixture. Stir to combine. ⁣

✅ Add to the 9X13 pan. ⁣

✅ Add the softened cream cheese and the remaining 2T monk fruit to the remainder of the berries and mix well. Spoon the cream cheese mixture on top of the oat mixture and spread it around. ⁣

✅ Place in the oven for 40-45 minutes or until the centre is cooked through. ⁣

✅ Cut into 6 pieces ⁣
