Lightened Up Egg Salad

This is the perfect recipe for all of those dyed hard boiled eggs you’ll have laying around 🐰 🐣

If you’ve tried my method of hard boiling eggs in the #instantpot this meal is super easy, quick, delicious, and healthy! Traditional egg salad is much higher in fat and lower in protein. Try this lightened up version that has a healthier dose of protein per serving. I’m a huge fan. 🙌 Let me know if you give it a try! ⁣


🔹 2 hard boiled eggs, diced ⁣

🔹 2 hard boiled egg whites, diced⁣

🔹 1 tablespoon light olive oil mayo ⁣

🔹 1 stalk celery, finely diced⁣

🔹 10g mustard (about 2 tsp)⁣

🔹 15g (one tablespoon) dill relish ⁣

🔹 1/8 tsp salt⁣

🔹 1/8 tsp pepper⁣

🔹 1/4 tsp dried dill⁣


✅ Mix all ingredients together.⁣

✅ Taste for additional seasonings and add as desired. ⁣

I love serving this over a bed of lettuce with crackers or 🥨. 🤤 ⁣
