I grew up eating hamburger helper so it has a place in my ❤️ This is a much lighter, higher protein and lower carb option that is awesome for meal prep! A super easy and quick recipe that’s sure to satisfy! Save this recipe for your next meal prep sesh!
🔹 1½ lbs extra lean ground beef
🔹 8oz white onion, chopped
🔹 1/3 cup tomato paste
🔹 2 tsp salt
🔹 1 tsp garlic powder
🔹 1 tsp chili powder
🔹 2 cups beef broth broth
🔹 1½ cups unsweetened cashew milk
🔹 8oz @eatbanza rotini
🔹 ½ cup light Mexican cheese shredded
🔹 3 cups baby spinach, chopped
🔹 Pepper to taste
✅ Brown the ground beef in a large pot.
✅ Add in the onion, tomato paste, beef broth, milk, chili powder, salt, and garlic powder. Mix everything together and bring to a boil.
✅ Once the pot is boiling add in the pasta and cook for about 7-9 minutes stirring frequently or until the noodles have softened.
✅ Add the cheese and spinach to the pot and stir. Taste and season with pepper and additional salt if needed.
✅ Divide equally among 6 containers.
✅ Serve with a veggie on the side if you’d like (I served with roasted broccoli)
