Greek Chicken & Feta Bowls

👉INGREDIENTS👈⁣

🔹2 bags Cole slaw mix⁣

🔹 1 medium sweet onion⁣

🔹1lb pre-grilled 🐔 breast⁣

🔹5oz light feta 🧀 ⁣

🔹1 bottle light Greek dressing⁣

🔹chicken broth, parsley, oregano⁣

🔹Sliced mild pepperoncinis ⁣

👉DIRECTIONS👈⁣

✅ Heat up a large non-stick skillet on medium/high and slice sweet onion. Add a little broth to the pan and add onion. Cook until soft, browned, and caramelized. You do not need to add oil to do this just keep adding broth as needed and scrape the brown bits from the bottom of the pan. Once done, remove from heat and place in a bowl.⁣

✅ Add a bit more broth to the skillet and add both bags of slaw mix. Cook 3-5 minutes turning frequently until slightly softened but still crunchy. Once it’s done, remove from heat and divide up between 5 meal prep containers. ⁣

✅ Divide up cooked onion between containers. (Approx 2oz cooked per container)⁣

✅ Dice up 15oz cooked chicken breast and place 3oz in each container.⁣

✅ Top each container with 1oz light feta cheese⁣

✅ Sprinkle with oregano, parsley, and sliced pepperoncinis⁣

✅ Top with 2 tablespoons light Greek dressing.⁣

✅ Put the lids on the containers and place in the fridge for the week ahead. Enjoy within 5 days🤤 ⁣
