Introducing Chicken Tinga! This is a traditional Mexican shredded chicken dish prepared with onion, tomato, and flavorful chipotles! Essentially, it's a combination of meat and vegetables (HEALTHY!) elevated and absolutely delicious! Enjoy it over a taco salad, in burrito bowls, or as taco filling!
Ingredients
~2.5lbs boneless skinless chicken breast (I used two packages from costco)
~1 medium/large white onion
~2 teaspoons minced garlic
~2 teaspoons oregano
~2 teaspoons cumin
~1 teaspoon salt
~2 cans fire roasted tomatoes
~3-4 chipotles in adobo (more if you like it SPICY!)
Directions
1. Add the chicken to the bottom of the instant pot
2. Add all remaining ingredients to a large blender and blend
3. Pour the sauce over the chicken.Â
4. Turn the instant pot on to manual, 12 minutes.
5. Once done, remove the breasts, shred the meat with two forks* and return it to the pot and incorporate into the sauce.
*If you are meal prepping and need a specific amount of protein for your meal, measure it once you shred it and add the sauce after.Â
Serve on tacos, make a burrito bowl with cauliflower (or regular) rice, peppers, guac, cilantro, or make a big a** taco salad and serve with a few plantain chips on the side.
EASY PEASY and done for the week!
