Ingredients:
🔹 2 cups Kodiak Cakes Protein-Packed Flapjack Mix (you can score a huge bag of it at @costco!)
🔹 1 tsp. Vanilla
🔹 1 tsp. Cinnamon
🔹 1/2 cup Monk Fruit Sweetener
🔹 1 cup frozen mixed berries or fresh-picked berry of choice (blueberries, raspberries, blackberries – whatever your heart desires!)
🔹 3/4 cup Applesauce
🔹 1 Egg White (about 46g)
🔹 3/4 cup Almond Milk
🔹 1/4 cup Butter, melted
Directions:
Preheat oven to 350 degrees
Mix first 4 (dry) ingredients together.
Mix wet ingredients together. Stir to combine.
Add to greased muffin tin.
Bake at 350 for 25 min or until golden brown and cooked through the center.
Cool and ENJOY! These are great with a pat of yogurt butter, plain, or with a smear of your favorite nut butter!
