🧅 Quick Pickled Onions 🧅

Add a burst of flavor to your meals with pickled onions!

I’ve been using these pickled onions on everything! I’ve been getting a bunch of messages asking where I get my pickled onions because y’all love them.

Well, I make my own-and before you roll your eyes it is STUPID easy! If you can cut some onions and heat up some water & vinegar on the stove you can make these!

Give it a try and add some zest to your next meal!

glass jar with r

Ingredients:

1 Red Onion, Very Thinly Sliced (I use the thin slicer on a box grater)

1 Cup Distilled White Vinegar

1 Cup Water

1/4 Cup Granulated Monk Fruit

1 Tsp Kosher Salt

1 Tsp Minced Garlic

Instructions:

  1. Add the vinegar, water, monk fruit, and salt in a small saucepan over medium heat and stir until the monk fruit and salt dissolve completely.

  2. Place the onions in a 16 oz. glass jar, you can pack them in tightly.

  3. Add garlic to the top.

  4. Pour heated liquid mixture on top of the onions and let it cool on the counter. Once cooled, you can put the lid on and place in the fridge.

  5. Let chill at least 30 minutes before consuming, but the longer they are in the liquid the more "pickled" they will become.

Storage and Use:

  • Store in the fridge for up to 10 days.

  • Use in salads, sprinkle on your tacos, top sandwiches, etc!
