Unfortunately the traditional blueberry muffin from your favorite coffee shop can easily run you 400+ calories and send your blood sugar soaring and your energy crashing a couple hours later. 👎 Give this quick and easy recipe a try. These are kiddo tested and freeze well so it’s easy to make a couple of batches and have them on hand for a quick snack or breakfast on the go with a protein coffee or smoothie!😋

🔹 2 cups kodiak cake protein packed flapjack mix (you can get a huge thing of it at @costco )
🔹 1 tsp. Vanilla
🔹 1tsp. Cinnamon
🔹 1/2 cup monk fruit sweetener
🔹 1/2 cup frozen blueberries
🔹 1/2 cup freeze dried raspberries
🔹 3/4 cup applesauce
🔹 1 egg white (46g)
🔹 3/4 cup almond milk
🔹 1/4 cup butter, melted
✅ Preheat oven to 350
✅ Mix first 4 (dry) ingredients together.
✅ Mix wet ingredients together. Stir to combine.
✅ Add to greased muffin tin.
✅ Bake at 350 for 25 min or until golden brown and cooked through the center.
✅ Cool and ENJOY! These are great with a pat of yogurt butter, plain, or with a smear of your favorite nut butter! 🤤
