Everyone loves a good muffin!! Unfortunately the traditional blueberry muffin from your favorite coffee shop can easily run you 400+ calories and send your blood sugar soaring and your energy crashing a couple hours later. šŸ‘Ž Give this quick and easy recipe a try. These are kiddo tested and freeze well so it’s easy to make a couple of batches and have them on hand for a quick snack or breakfast on the go with a protein coffee or smoothie!šŸ˜‹ā£

🟣INGREDIENTS🟣⁣

šŸ”¹ 2 cups kodiak cake protein packed flapjack mix (you can get a huge thing of it at @costco )⁣

šŸ”¹ 1 tsp. Vanilla⁣

šŸ”¹ 1tsp. Cinnamon⁣

šŸ”¹ 1/2 cup monk fruit sweetener⁣

šŸ”¹ 1/2 cup frozen blueberries⁣

šŸ”¹ 1/2 cup freeze dried raspberries⁣

šŸ”¹ 3/4 cup applesauce⁣

šŸ”¹ 1 egg white (46g)⁣

šŸ”¹ 3/4 cup almond milk⁣

šŸ”¹ 1/4 cup butter, melted⁣

🟣DIRECTIONS🟣⁣

āœ… Preheat oven to 350 ⁣

āœ… Mix first 4 (dry) ingredients together.⁣

āœ… Mix wet ingredients together. Stir to combine. ⁣

āœ… Add to greased muffin tin. ⁣

āœ… Bake at 350 for 25 min or until golden brown and cooked through the center. ⁣

āœ… Cool and ENJOY! These are great with a pat of yogurt butter, plain, or with a smear of your favorite nut butter! 🤤 ⁣
