Paleo Pizza – Quick, Easy, Delicious

You know what’s hard to do? Make a paleo pizza that actually tastes like pizza without using flour and conventional cheese. You know what I did? I DID IT. And it’s easy. And you’ll like it.

I actually ate this pizza on a pretty regular basis when I was “dieting” for my last bikini competition. Pizza? Yup, I’m that awesome. You can call me Chef Erin. This recipe can be easily doubled for two (or more) people.


This is the best non-traditional pizza I’ve had, and I’ve tried a lot of different types of pizza. It’s quick, easy, delicious and guilt free!

Macros: Coconut Flour Crust: 135 calories, 2.5g fat, 6g Net Carbs, 16g protein Toppings, cheese, and sauce macros will all depend on amounts and type used. Whole pizza as pictured: 394 calories, 14g fat, 14g Net Carbs, 39g protein



Paleo Pizza – Quick, Easy, Delicious

Prep time:  5 mins Cook time:  15 mins Total time:  20 mins Serves: 1


Ingredients Crust:

  • ½ cup Egg whites (or you could use 2 whole eggs-eat those yolks!)

  • 2tbsp coconut flour

  • ¾ tsp baking powder

  • 1tsp Italian seasoning

  • ½ tsp garlic powder

Toppings:

  • Pizza or Pasta Sauce (choose one that doesn’t have sugar in it so it will be lower in carbs).

  • Any other toppings you wish-I love turkey pepperoni, mushrooms, onions, and peppers.

  • Non dairy cheese of choice or you can use regular cheese if you eat dairy.

Instructions:

  1. Combine all ingredients for the crust and let it sit for a few minutes so the coconut flour will absorb the liquid. It will get thick. If it’s too thick you can add a tiny bit of water.

  2. Heat a non-stick skillet on medium heat and pour the batter into the skillet.

  3. Spread the batter around the skillet so the crust is around 10’’or so. If you make it too thick the crust will seem too bready and dry.

  4. Let it cook for a few minutes until golden brown and then flip it over to cook the other side.

  5. Once your crust is complete, turn your oven on to broil.

  6. Place the pizza crust in the oven for a minute or two on each side to toast the crust a little, then remove from oven.

  7. Take your sauce and spread it on the crust (I usually use about ½ cup).

  8. Top with the almond cheese or any cheese and toppings you choose.

  9. Place the pizza on a cookie sheet in the oven on broil for a few minutes until the cheese melts.

  10. Cut into slices if you want, and ENJOY!
