Nutrient Dense Egg & Sausage Bake


I get requests for this recipe all of the time and the thing is, I just sorta throw it together so I don’t really think about it being a recipe buuuut you ask and I deliver so here she is! ⁣

This is my go-to, super adaptable, delicious and nutrient dense breakfast that never fails me! You can add in your seasonings, protein and veggies of choice but here’s how I did this one:⁣

Ingredients:⁣

5 organic eggs⁣

450g (just under 2 cups) egg whites⁣

9 Jones chicken sausages (cut into coins)⁣

1 12oz bag frozen broccoli & cauliflower ⁣

A few handfuls of shredded kale⁣

Half a package of baby Bella mushrooms ⁣

Lots of @traderjoes seasoning⁣

Directions:⁣

Preheat oven to 400⁣

Mix eggs and egg whites together⁣

Microwave frozen veggies and chop into smaller pieces ⁣

Microwave chx sausages and cut into coins⁣

Grease 9x13 with avocado oil spray⁣

Add veggies, sausage and seasonings to the pan⁣

Pour egg mixture over the top. ⁣

Use fork to press down and make sure the eggs cover everything⁣

Place is oven for 30-35 min or until cooked through.⁣

Allow to cool and cut into 6 pieces.⁣

Nutrition: 180kcal 22P/8C/8F⁣

I serve this along side of carb of choice (for me it’s usually roasted potatoes and usually a protein coffee!
