It is HAWT outside and the last thing I am feeling is a hot and heavy lunch. The heat has me craving light and cool. This recipe delivers! It would be easy enough to multiply the recipe and make a big batch to have on hand for the week. It’s delicious as lettuce wraps but you can also serve it over mixed greens or even with some crackers or in a wrap if you want more carbs.
INGREDIENTS:
🔹4oz grilled and chopped chicken breast
🔹1.5oz (approx 1/4 cup) red grapes, halved
🔹1oz (1/4 cup heaping cup) apple match sticks (I used honey crisp)
🔹7g toasted pecan or walnut pieces
🔹1.5 oz (approx 1/4 cup) small diced celery
🔹4 teaspoons (20g) Olive oil mayo
🔹4 teaspoons (20g) plain greek yogurt
🔹Salt and pepper to taste
🔹3-4 romaine leaves or lettuce of choice
DIRECTIONS:
🔹Add first 5 ingredients to a large bowl and stir to combine.
🔹Stir in mayo and greek yogurt.
🔹Add salt and pepper to taste
🔹Divide among 3-4 romaine leaves
