Breakfast Taco Bake

šŸ”¹Three multicolored bell peppers, sliced⁣

šŸ”¹1/2 sweet onion (about 4oz), sliced ⁣

šŸ”¹1/2lb extra lean ground beef⁣

šŸ”¹Taco seasoning⁣

šŸ”¹2 1/4 cup egg whites or 552g⁣

šŸ”¹Cilantro and salsa for serving (optional) ⁣

āœ… Preheat the oven to 400 degrees.⁣

āœ… Add a tiny bit of non stock spray to a large skillet. Add the peppers and onions and sautĆ© until soft. Usually I add a little broth or water to help them cook/soften without adding extra fat. ⁣make sure it all cooks off before you remove from pan because you don’t want any extra liquid in with the eggs.

āœ… Sprinkle a little taco seasoning in the skillet and stir to combine. ⁣

āœ… Place the cooked peppers & onions in a 9x13 casserole dish sprayed with non stick spray.⁣

āœ… Return the skillet to the stove and add 1/2lb lean ground beef. Crumble, cook and add taco seasoning (approx 1/2 packet or a have a recipe on my feed that has all clean ingredients) ⁣

āœ… Once the ground beef is cooked, sprinkle it in the casserole dish. ⁣

āœ… Pour egg whites over the pepper, onion, and beef mixture. Top with cilantro and sprinkle with taco seasoning.⁣

āœ… Bake in turn oven for 25-30 minutes or until the center is cooked. ⁣

āœ… Let cool and cut into 6 pieces⁣

āœ… Serve topped with salsa and a sprinkle of cilantro if you’d like! šŸ™Œā£
