🔹Three multicolored bell peppers, sliced
🔹1/2 sweet onion (about 4oz), sliced
🔹1/2lb extra lean ground beef
🔹Taco seasoning
🔹2 1/4 cup egg whites or 552g
🔹Cilantro and salsa for serving (optional)
👉Directions👈
✅ Preheat the oven to 400 degrees.
✅ Add a tiny bit of non stock spray to a large skillet. Add the peppers and onions and sauté until soft. Usually I add a little broth or water to help them cook/soften without adding extra fat. make sure it all cooks off before you remove from pan because you don’t want any extra liquid in with the eggs.
✅ Sprinkle a little taco seasoning in the skillet and stir to combine.
✅ Place the cooked peppers & onions in a 9x13 casserole dish sprayed with non stick spray.
✅ Return the skillet to the stove and add 1/2lb lean ground beef. Crumble, cook and add taco seasoning (approx 1/2 packet or a have a recipe on my feed that has all clean ingredients)
✅ Once the ground beef is cooked, sprinkle it in the casserole dish.
✅ Pour egg whites over the pepper, onion, and beef mixture. Top with cilantro and sprinkle with taco seasoning.
✅ Bake in turn oven for 25-30 minutes or until the center is cooked.
✅ Let cool and cut into 6 pieces
✅ Serve topped with salsa and a sprinkle of cilantro if you’d like! 🙌
