Quick & Easy Bacon, Egg & Cheese Breakfast Burrito
This recipe can be prepped for the week ahead or made in under 5 minutes if you need a quick breakfast. It’s portable enough you can wrap it in some aluminum foil or a paper towel and eat on the go if needed and it’s got delicious salty bacon in it! What more could you want from a macro friendly meal?
🔹1 large Xtreme wellness low carb tortilla (80cals) The smaller ones can be used here but they are hard to pack all of the goodness in
🔹3 servings egg whites (9 TBSP or 138g)
🔹2 pieces precooked bacon (I get the stuff from @Costco @ 90 cals a serving-you could also do turkey bacon here if you wanted)
🔹1 laughing cow cheese wedge, any flavor
Salt, Pepper, herbs to taste.
🔹Non stick cooking spray
DIRECTIONS (Individual burrito method):
🔹Take the large tortilla and spread the laughing Cow cheese in the middle of the tortilla leaving just a little cheese on your knife.
🔹Place the two pieces of precooked bacon in between two paper towels and microwave for 30–45 seconds or until crisp. Add to the top of the tortilla
🔹Measure out 3 servings of egg whites into a microwave safe bowl. Add a generous amount of salt, pepper, and any other herbs or seasonings you’d like. (I love using fresh basil and dill here!)
🔹Microwave the egg whites for a 1-1:30, then flip to continue cooking for another 30 seconds or so until done. Once complete, add the egg whites to the middle of the burrito.
🔹You can add salsa if you’d like, or any veggies or just go plain Jane. I love adding some broccoli sprouts for crunch!
🔹Wrap the burrito, tucking in the sides so everything stays put.
🔹Use the last little bit of cheese to “seal” the burrito shut.
🔹Place in air fryer with a touch of EVOO spray on 350-400 for 3-5 minutes until it’s nice and toasty (optional). You can also just wave it for a few more seconds or go ahead and devour it-I’m just providing you with bougie options to make it even better!
